Instead of heavy cream and sugar, we’re using non-fat Greek yogurt and stevia to keep things light while still delivering that rich, velvety texture. The result? Ingredients
For the Cream Layer:
4 large egg yolks
¼ cup stevia (or preferred sugar substitute)
16 oz mascarpone cheese, softened
200g non-fat vanilla Greek yogurt
For the Matcha Soak:
1 cup warm water
1 tbsp matcha powder (plus extra for dusting)
For Assembly:
1 package of ladyfingers
1. Make the Cream Layer
In a heatproof bowl over a pot of simmering water (double boiler method), whisk the egg yolks and stevia together. Continue whisking for about 5 minutes until the mixture turns pale yellow and slightly thickens. This step helps create a smooth and stable cream.
Remove from heat and gently fold in the softened mascarpone until fully incorporated.
Add the Greek yogurt and mix until smooth. For best results, refrigerate the mixture for at least an hour to enhance the texture and flavor.
2. Prepare the Matcha Soak
In a shallow bowl, whisk 1 tbsp of matcha powder with 1 cup of warm water until fully dissolved.
3. Assemble the Tiramisu
Quickly dip each ladyfinger into the matcha soak (do not oversoak or they will become too soft).
Arrange a layer of dipped ladyfingers in a small to medium-sized dish.
Spread an even layer of the cream mixture over the ladyfingers.
Repeat the layering process until you reach the top of the dish, finishing with a final layer of cream.
4. Chill & Serve
Cover and refrigerate for at least 4 hours (or overnight for the best texture).
Before serving, dust the top with additional matcha powder for a beautiful finish.
Mascarpone Substitute: If you want to reduce the fat content even more, you can replace half of the mascarpone with extra Greek yogurt. This will increase the protein while keeping it creamy.
